I think that without a doubt it is the flavor of the island, in this month and the next, months par excellence of the cheeses from the north of the island. In these months there are various festivals dedicated to the cheeses that must be included in our #gastroagenda.
Write down, “European Cheese Fair” that will be held on March 4 and 5 in Tejeda, then we will have two big parties that are also accompanied by tasting, the Gáldar cheese festival and the Guía cheese festival. Both appointments are very important moments for the purchase of the great cheeses of the island.


What cheese to buy?
That is the million dollar question and so difficult to answer, it must be said that in the Canary Islands it is one of the territories with the highest cheese consumption per person and year, declared, we are real mice. Added to this, we are a territory with great diversity of types of cheeses and this is due to the fact that we are an island with a large number of small cheese factories, this is the cause of our great variety of cheeses, the territory, the pastures, the breeds… all this and much more, makes that we have a great diversity of cheeses when buying.
Do I want a cheese? What type? What kind of milk do you like? What kind of ripening do you like?
Tantas preguntas para comprar un queso, pues te puedo decir que en la isla en los municipios que más quesos producen son Gáldar, Moya, San Bartolomé de Tirajana, Valsequillo…, que los quesos que mayor producimos son aquellos de origen de leche de cabra 77%, de vaca 19,5% y finalmente 3,5% de oveja. En maduraciones, mayoritariamente hablamos de semicurados con 46%, curado 34%, tierno (frescos) 11% y flor con un 9%.
Pues ahora les toca viajar por las queserías y conocer un poco más de este mundo. Aviso, aprovechen los tiempos de los quesos de flor y de media flor, porque es poco tiempo y la producción es limitada, sin duda una de las grandes joyas gastronómica de la isla.
